Ahhhh.....did you hear it?



Did you hear the big sigh today about 5 PM (Nigeria time)?
The work of the week is over.

It's been a long, busy week

Long.

Very busy.


Friday was Elementary Field Day.
SO much fun...Naomi came down the waterslide head first, backwards.

Lauren just came down.


On Friday night we had the entire 8th grade over for a big party at our house.

Lots of games played.
Tons of food eaten.
Bonfire with s'mores enjoyed.
Water balloons thrown.
Capture the flag played.
Flour dumped on heads.
Jolly Ranchers handed out.
Memories made.

Saturday morning Jon went to a school to play with football (soccer) with the kids and share God's love.
Got home in time to head out for carnival activities at school.
Jon worked a wet sponge-throwing booth...he was the target.
Lauren worked the zip line.
I sold tickets.



We all had so much fun!

Now, we are going to rest. Ahhhhhh......

Next week we're taking the 7th grade camping.

Here is the recipe for French Silk Pie. It is really not too hard.

French silk pie



• 1 cup sugar

• ¾ cup butter (best if soft, at room temp)

• 3 oz unsweetened baking chocolate (that is 90-100 grams)

• 1 ½ teaspoons vanilla

• 3 eggs

(best if you use unsweetened baking chocolate but any chocolate
works. I have good results using the dark Lebanese chocolate you can get at Tamerash. You may want to cut back on sugar a bit, though, if you use sweetened chocolate)

Instructions:

• Melt chocolate and allow to cool while mixing other ingredients.

To prevent burning use a double boiler. If melting in microwave, only use LOW power and melt for short time periods, checking it often. It may not look melted much in microwave but if you try to stir it, it will often melt as you are stirring it.

• In large mixing bowl mix together sugar and butter and beat until fluffy - about 4 minutes.

• On low speed, SLOWLY add cooled melted chocolate to mixture; scrape bowl and mix well once all the chocolate has been added.

• Add eggs (yes they are raw) one at a time at medium speed
scraping the sides of the bowl and mixing in each egg well before adding the next.

• Add vanilla and beat on HIGH speed until fluffy - about 1 minute

• Pour into pre-baked cooled pie shell and chill over night.

(You could also use graham cracker crumb crust [which you can make from "cabin biscuits”] or even Oreo cookie crumb crust if you are a real chocolate fanatic!)

Pie Crust:

1 cup flour
Just less than a ½ cup of shortening
Approx. 3 tablespoons water (ice water seems to work best)
• Mix the flour and shortening, cutting the shortening into the flour until you have pea size pieces of flour and shortening.
• Add water to mixture and mix until it forms a good dough. NOTE:
Only add enough water so mixture sticks together in a ball. If you add too much water you will have trouble rolling out the dough and your crust will be tough.

• Roll out crust on a floured board. Place in pie tin and bake at about 350 until crust just begins to brown. Remove and allow to cool before adding French Silk filling.
